What did you use to generate a Privacy Policy for GA

I want to set up GA (google analytics) on my websites, but I don't know what I need to do, legally.

What did you add to your website to use GA? Do I need a cookie banner and how can I get a privacy policy?

If you speak German: https://www.nexgam.de/datenschutz.html We manage the tech stack for this project and my buddy created the policy for them. There's everything included that's needed, there is a GA part, too

I want to have more information, I tried with fathom, but I find that the extra information that GA provides would be useful.
